Cabernet Sauvignon

The wines made from this variety belong to the best-known and most renowned wines in the world. As early as 1635, Cabernet Sauvignon was mentioned in French documents. Worldwide this variety is grown on around 165,000 hectares. However, in Germany the area under cultivation is relatively small. Overall it covers 278 hectares (2007) of which more than half (146 hectares) are located in the Palatinate region. The Cabernet Sauvignon is one of the late-ripening red wine varieties, which needs to be grown in warm and good or even excellent vineyards. The grapes are rich in seeds, pigments and tannins which give the wine its deep dark colour and make it an ideal contender for the use of wooden vats or barriques as well as years of barrel-aging.
