The Riesling grape represents German viticulture as no other and is grown on more than 21,000 hectares across Germany. The Riesling is quite demanding when it comes to vineyard location as it ripens very late. Its essential characteristic is its fruity acidity. However, it only takes a few changes of soil quality or micro-climate to affect the aroma of the wine. Dry weathered red sandstone soil produces very aromatic Riesling wines that frequently taste of apricot. Mineral soil tends to mainly bring out citrus and flint stone aromas.
